Or empty it out like a boat and stuff it with something, maybe rice & beens or sloppy joe..
Put it on skewers with some other veggies (or just zucchini), spray it, season it and grill it. Yummy!..

Roast it, grill it, or grate it and add to the mashed potato lunch for zucchini cakes (add a little egg or egg white or egg substitute, form into patties and "fry" in nonstick skillet with or without cooking spray)...

Zucchini is one of my favorite veggies.
I like to slice it up, put it in a bowl and mix it with a small amount of canola oil to coat it and seasonings (like Mrs. Dash or sometimes I make up my own mixing with a tiny bit of sea salt, black pepper, paparika, garlic powder and chilli powder all together).
Put it on a non-stick cookie sheet and in the oven it goes at 425 degrees for about 45 minutes........
Delicious and my family loves it..
I shave raw slices so they are very thin and add small amount of olive oil, , basil thinly sliced as well and sometimes add wedges of orange to this. It's so refreshing in the summer. Oh salt and pepper too!..
You can make a Nutrisystem friendly version of zucchini bread or muffins...
I slice up a zucchini or two and add in a can of no salt added stewed tomatoes and let it simmer for a while - add a dash of grated parmesan cheese.....yummy!..

Zucchini makes a great add it to the tomato sauce Nutrisystem meals. Cook chopped zucchini in chopped tomatoes with Italian herbs and pour over lasagna or add to rotini or chili...
I love love love making zucchini fries! Slice them up, dip in egg beaters (small amount- so it's a free food), roll in bread crumbs (also such a small amounts is a free food). Put on a cookie sheet and cook at 425 till crispy. I dip mine in ketchup..
I tried a zucchini "fries" recipe and they were great. Here is the recipe.
" 2 zucchini.
" 1 egg white.
" 1/4 cup milk.
" 1/2 cup shredded Parmesan cheese.
" 1/2 cup seasoned breadcrumbs.
" Vegetable cooking spray.
Preheat oven to 425. Cut zucchini into 3-inch sticks. Whisk an egg white in a small bowl, and add milk. Combine Parmesan and seasoned breadcrumbs in a separate bowl. Dip zucchini sticks into egg mixture, and then roll in breadcrumb mixture. Coat a baking sheet with cooking spray, and place zucchini on sheet. Bake for 2530 minutes or until golden brown...
These are awesome with the Japanese Panko Bread crumbs...they are crispier crumbs..
I have kids coming to visit and they (of course) thrive on junk food. I will try this to see how it goes over.
