FIrst, stir them and let them sit for a few minutes. Make sure all lumps are whisked out. I add a little more water than called for. Nuke for 40 secs or so, stir, nuke again. My eggs are great. THey're fluffy and good.
If you overcook them, they are rubbery..
I sometimes add a little Lc cheese over the top and a little salsa for something different...

Yes, definitely stir them up well! I use the back of a spoon to break up any lumps, and then wisk them until they're a smooth consistency..
I like them cooked on the stove, too. I usually spray the skillet with Pam, and then throw in a few mushroom and green pepper slices. Once they're cooked nicely, I add the eggs. And a Tbsp or so of shredded low fat cheese added during the last minute or so of cooking is yummy..
When you cook them this way, they'll taste very similar to Egg Beaters...
I'm a little late to respond, but I actually like the eggs. I find they mix best in the shaker jar, then I let them sit for about 1-2 minutes. I then add .25 oz of diced fresh mushrooms and about 1/4 cup of fresh spinach into mixer, shake again...I pour into microwaveable dish (like a pyrex bowl, perfect for "mcmuffin sized eggs) and cook for 1 min, stir (more chop and flip), then cook another 30 secs. When they come out, they are fluffy and tasty.
Try mixing your eggs with FF chicken broth. Gives them a buttery flavor and more like real eggs They turned out to be one of my favorite. I too cook mine in a skillet on the stove...
I haven't tried any of these recipes yet, but they do use Medifast Eggs:.
1 package Vanilla shake.
1 package Medifast eggs.
1/4 tsp baking powder.
1 tsp vanilla.
1 packet Splenda.
Add water to get a thin pancake batter consistency. Heat a small non stick skillet with Pam (8 inch?). Pour in enough batter to coat bottom of the pan. Cook over medium heat until set. Then turn (I use a silicon spatula) and cook the other side for a minute. You may need to experiment with cooking temp/time.
Blueberry Lemon Muffins.
1 package Medifast Blueberry Oatmeal.
1 package Medifast scrambled eggs.
2 packages Medifast vanilla pudding.
1 1/2 c water.
2 packets of Splenda.
1/2 t baking powder.
Pinch of salt.
1 Tablespoon grated lemon rind.
1 Tablespoon cinnamon.
Whisk well and let sit for about 15 minutes. Whisk again and pour into 8 sprayed muffin tins. Bake in a 350 oven for about 40 minutes, or until toothpick comes out clean. Serves 4. Refrigerate unused portions and eat promptly..
1 Medifast Eggs mixed with the 4 oz water.
1 Oatmeal - any flavor.
1/4 tsp Baking Powder.
1/8 tsp Vanilla.
Mix eggs well (I use my blender on it's lowest setting).
Add Baking Power and Vanilla..
Pour into a bowl, stir in Oatmeal..
Spray non-stick pan with Pam. Makes 4 fluffy pancakes - two meals. Top off with a little ICBINB and SF syrup. Yum!..
I too like to cook the eggs on the stove top in a non stick pan. Spray with Pam. I have never let mine sit after mixing though. I cook them on med high heat and watch them. Love to shred up some baby spinach and low fat shredded cheese to throw in at the very last. Then top with a tablespoon of low carb fresh salsa. Very tasty this way,and will keep you full for a lot longer than some of the other meals...
I made them yesterday and they were YUMMY! I made them just as the package asked, and after they were done, I added 1/2 of a light Garlic and Herb Laughing Cow wedge and some salt and pepper and I was totally shocked that I actually like them. They are a bit scary...but actually...when I think about it...I'd prefer to eat powder that came out of a foil wrapper rather than a round white object that came out of a chicken...

I DECIDED TO CHOOSE MEDIFAST OVER NUTRISYSTEM BECAUSE I LIKE TO DINE OUT ONCE A WEEK W/ THE HUBBY AND WITH MEDIFAST,YOU DO PLAN 1 MEAL A DAY ON YOUR OWN. IT GIVES ME SOMETHING TO LOOK FORWARD TO. I PUT MOST OF MY WEIGHT ON OVER THE LAST 2 YRS WHILE SUFFERING FROM LOWER BACK DISK PAIN PLUS PLANTAR FASCIITIS SO I WAS BARELY ABLE TO WALK,LET ALONE EXCERCISE. I CAN'T IMAGINE HOW DIFFERENT IT WOULD BE IF I WERE WALKING 20 MINUTES A DAY. THIS PLAN DEFINTELY WORKS.

There's several recipes on this forum for cakes and muffins that use egg packets. Maybe try a search? I'd link to some but I have to take my daughter to dance now!..
Medifast eggs are by far my favorite food. I make an omlet 4 days a week.....
1 pkg scam egg.
1/2 c h20.
4 dash tabasco.
Dash of mrs dash.
Mix together in magic bullet, pour into heater 250 degree frying pan that's been coated with olive oil... add whatever left over veggie from previous nite (green beans, asparagus).
Cook and serve. I like to top mine with 1/2 tbs of salsa too. So good and filling...
I like to throw in some fresh spinach, nuke it a minute, stir, nuke a little longer if needs it (I like fully cooked eggs) then add some LCL or hot sauce.... makes me feel virtuous for sneaking the the veggie.... I did WW for a while and they were all about adding veggies along the way..and this feels like training for later on....
I do soak them for about 5 minutes before cooking - and Btw my parrots (very picky eaters) always beg for a bite of the eggs - and oatmeal too for that matter!..
Starting day 8 so I enjoy reading the postings and learning! (I am still trying to figure out how to update my ticker to show I lost 6 pounds the first week...that is a different topic).
I made the Apple Cinn. Muffins this morning and they are very mushy in the middle so I sliced them very thin (plastic knife worked best) and toasted them. The taste is still good and the texture is more palatable to me.

I use a small skillet to heat some morning star farms sausage and while that is cooking I mix the eggs and water in my magic bullet. I like to add some diced peppers and ff cheese to make an omlet or sometimes I make scrambled eggs. I have these almost every day. I didn't like the eggs in the microwave and haven't found the muffins or pancakes done with the eggs to my liking. Good luck finding something you like...
For the MediFast eggs I found something wonderful I HATED them the first time that I tried them but the second time I used 2oz water instead of 4oz and made them on the stoves and they actually tasted like scrambled eggs it was a HUGE change ... I do add pepper though... but yeah make them on the stove with half the water and then they actually taste good...
I am a little late on this post but try mixing the eggs in a blender (I use my Magic Bullet) and then cook on the stove. The eggs are one of my favorites and my kids usually want a bite, too! There are lot of good ideas on this post, especially adding veggies. Good luck and I'm sure you will find something that works!.
The crepe recipe is awesome, then add some WF fruit syrup or jelly when done. Major treat!..
I love the eggs. But I NEVER nuke them. I always cook them on the stove, being careful to continually scramble them as they cook, and to not overcook them or they come out rubbery. As for stirring, I've never had lumps. I just whisk them with the water in a glass dish untill there are no lumps and then pour them directly into the heated pan. Sometimes I mix in diced mushrooms, pepper, onion and a smidgen of shredded cheese. Other times I top with Pace Thick and Chunky salsa...
I love the eggs as well. I found that mixing them up about an hour before I nuke them makes them fluffier. I add Red Hot sauce to mine or cayenne pepper...yummy!! Now if I could just eat all the oatmeal that I have sitting in the drawer...YUCK!!..
Try mixing in some hot sauce before you microwave or cook them in skillet. And definitely shake well!..
I put a packet on my MB w/ a vanilla shake and about 10th oz water. Blend and split in half for two delicious egg nog meals! Yumm.. I also sprinkle the top w/ a bit of nutmeg..
