Turkey Meatloaf recipe for Medifast

I made a really good turkey meatloaf as part of my L&G last night...here's what I used:.

6 oz. extra lean ground turkey.

Fresh spinach - about 1/2 cup.

1 T chopped red onion.

Garlic powder, spicy salt, pepper, to taste.

1/4 cup canned diced tomatoes.

Mix up the ground turkey with the onions, spices and spinach. The spinach doesn't necessarily stick in very well, but you can press it in further when you put it into the pan, and it reduces when you bake it. Press the mixture into a mini-loaf pan, and bake for about 20 min. at 350. Top with diced tomatoes and bake another 5 min. Round out the meal with the rest of your daily veggie allotment - I had broccoli with trans fat free butter spread for my healthy fat. It was YUMMMM on a cool night! Enjoy!..

No egg? I am thinking the tomatoes kept it pretty moist. Meatloaf is my H's favorite meal so this may just come in handy. Thanks..

Yeah when I make it I reduce the amount of ground and add a little egg beater to help it hold together. What I haven't tried yet but would like to is to save some of the parm puffs and use them like bread crumbs in it too. Flavor and help it to be more of a loaf. Thanks for the idea, mmrl08..

I also make my meatloaf without eggs by adding a little Lipton Onion Soup mix, tomato sauce and form loaf in my crockpot. Pour small amount of Salsa over top, set for 8 hours on Low and come home to the best meat loaf ever!..

I used a package of crumbled crackers (snack item). It made a slightly different texture but not much...

Hey tmr40109....crockpot meatloaf sounds great! Will you post your receipe...how much meat do you use?? With the summer in the south I would love to cook more variety in my crockpot...

I use rotel and a little onion soup mix also. It is SO good!..
