My family wanted tacos for dinner, so I decided I would make mine a bit "special"..

I cooked up some ground buffalo with taco seasoning. My family had the traditional taco shells with all the typical fixins. I weighed out my 7oz of meat, and scooped some of it onto big iceburg lettuce leaves with some chopped tomato, and rolled them up. I went through FOUR, and could barely finish the last one.

Yum!..

We had tacos last night and I did just that only with lean beef and bibb lettuce. it was surprisingly yummy, and can see even doing that sometimes even when I CAN eat taco shells... it was good...

I love Mexican food and Taco's and Tostado's are really my downfall but I like your ideas and will try them this weekend. Great idea...

I do taco salad all of the time and let my roommate have all of the fixings and I add what I can on plan and it's the best and yes I agree very filling...

I love tacos...I use either ground turkey or shrimp marinated in a tbsp of Lawry's Mexican Chile & lime ... and we usually use red leaf or romaine lettuce for the wraps YUM!..

I do the same thing all the time but what I do what is my favorite is buffalo chicken lettuce wraps... Chicken breast with a small dash of franks hot sauce... Add tomatoes and celery roll them and dip them in light carb ranch.. !!!..

That sounds delicious! I think I'll pick up some ground buffalo at the farmer's market on Sunday and make this for lunch!..

I just cook ground turkey with my taco seasoning and then serve it over romaine lettuce with chopped tomatoes and some salsa. If you have Medifast crackers or the rice cake things, crumble them up on top to give you that crunchy texture. It's my shell-less taco salad...

If I go to the grocer's one more time for the items needed to complete all the great sounding meals on the boards, my husband is going to disown me...LOL.

I wrap everything up in lettuce lol. ive been doing that for a long time. I'm glad it is a good way to mix up our l&g cause I love it!..
