Medifast recipe for Spinach & Mozzarella Stuffed Chicken with Parmesan Crust?

This is a modified version of KarenB's recipe. I tried it last night and it was delicious..

Foster Farms sells flattened chicken breats, so they're very easy to use in this recipe.

Sprinkle garlic salt and pepper on one side of the chicken breats. On the other side, add chopped frozen spinach, low fat mozzarella cheese, and a pinch of garlic. Fold the chicken breast in half. Top with I Can't Believe It's Not Butter and shredded parmesan cheese. Bake at 350 for about 30 minutes. You're done!..

This sounds delicious! One question though usually when I pound my chicken breasts to thin them out, I usually end up needing to eat two to get me to 7 ounces of lean. How many of these did you use for your daily lean and green portion?..

I had two chicken breasts for the lean. Also, I added some sauteed cabbage with Galeos dressing for the rest of the green. Hope that helps!.

I am certainly no chef.. This is the first time I've cooked in years and it's fun!..

Wow Joy, sounds fantastic. I sometimes use mozzarella if I have it. One of these days I might also try ricotta, I love the stuff and I figure you only need a small amount to stuff a chicken breast. Thanks for sharing!!..

One of the reasons that I haven't cooked in so long was that I felt that I would spend a long time in the kitchen and the final result would not be worth the effort! Yesterday, it definitely was. I'm eating my stuffed chicken for lunch today!..

I don't have much time for the kitchen so anything I make has to be fast. I'm too impatient (and these days, hungry!!)..

Have you tried the muffins with the vinegar? I'm in love with that recipe. I've been having it every day for lunch. The trick is to get the mini loaf pan or find something small you can cook it in. I made the mistake of splitting it into three muffins and they're like hockey pucks. Recently I found a glass bowl that is suitable for the oven, and now I'm finding it to be one big muffin, very fluffy and great warm..

Let me know what else you decide to cook, I might just follow you!.

Here's one I like from DDancer, By the way, your chicken recipe sounds good enough to serve to dinner guests...mmmm!.

In a bowl:.

1 pkg Oatmeal mix.

1/4 tea baking SODA (Box).

1/8 tea baking POWDER (Can).

Splenda to taste.

Spices to taste (Dry only).

In a 1 cup measure:.

1/3 cup water.

1 tea white vinegar.

1 tea vanilla (or to taste, or other liquid flavor).

Have a mini bread pan sprayed and ready to go. The oven should be preheated to 350..

You MUST have everything ready to go before you mix the wet and dry as the chemical reaction takes place quickly and we want to trap as many bubbles as possible..

Mix the dry ingredients well, and then mix the wet ones. Pour the wet into the dry and mix up to a smooth batter as quickly as possible. Pour into pan. Bake for 15-16 minutes...

OH MY GOSH!!!!! I'm in heaven. For my son I left out the spinach and put just the mozzerella in it. At the store today I found a chipotle cream pasta & cooking sauce from Dominicks. Since I don't ever eat a snack during the day I figured I could get away with adding a couple tablespoons on top of each chicken breast after it came out of the oven. The heat from the chicken warmed it up. 1/4 cup has 4 carbs and 80 calories.

Probably not right but close enough for me. I did my chicken breast the way you said and used the fresh garlic pressed in the spinach with the 2 tablespoons of this chipotle sauce on top. OH MY GOSH!!! Did I say that before? Let me say it again...OH MY GOSH!!! My 16 year old begged me to make this again even after I lose all the weight. He doesn't ever want me to forget this recipe. I can't thank you enough for posting it.

When we left the house and came back later to the smells of this meal, my son raved again at how wonderful it was. I'm doing a happy dance here in the Windy City. Thanks!!!!!..

Thank you so much for the nice compliment!! I am really glad that you liked the chicken recipe. It was inspired by KarenB, but I improvised a little with the spinach and mozzarella. I think another variation would be chives instead of spinach. Almost like a chicken kiev, but without the breading. I can't wait to try out some recipes and when I find another good one, I'll let everyone know..

I'm not a very experienced cook. Most nights I pick up something prepared from Whole Foods Grocery or get something from the cafe at my gym. I am learning to cook healthier and I'm glad that it is helping people too...
