I had some Trader Joe's already cooked Wild Pacific Salmon (it's pink, not red and so less fat and calories) and needed something to do with it besides a salad. It's in their refrigerator case, if you're looking for it. But, I imagine you could sub pink salmon in the can or pouch from the regular market. Just check out the calories to see if it's comparable. The TJ's is so low in calories, 6 oz. is only 180 calories, 3 g fat, 0 carbs, and 36 g protein! So I use 6 oz.

These were delicious and fast and made a lot of food. My husband says make some for him too next time (and he is not a fish lover)..


6 oz TJ's Wild Pacific Salmon.

1/4 cup Egg-Beaters.

Seasoning (I use a little garlic and onion powders and tonight fresh cilantro).

1.Throw all the ingredients in a food processor (I used the small Ninja bowl) and process til salmon is finely chopped and all ingredients are mixed well.

2.Spoon mixture out and make small patties (I ended up with 5). Small means they're more likely to stay together. And they did, perfectly..

3.Heat a 12" non-stick pan on med. to med-hi heat. Spray with some PAM. Place the patties in the pan and saute one side until golden, then flip and saute the other side. This took about 2-3 mins. a side..

4. Serve. I topped them with 1 tbsp. of Hellman's Light Mayo, since there is so little fat in the proteins used, which I divvied up between the patties..

I would eat these if I weren't on a diet!.

I just made Salmon cakes tonight! I put in 1 TBL capers in the blender with it. It was so good! Looking at the Lean List, it says Salmon serving is 5ounces. Is that wrong? Did I short myself some Lean?..

Jillybug, it depends on the kind of salmon you used. Red salmon, like sockeye, is much higher in fat and therefore calories, so 5 oz. would be right for that. Although Medifast does not discriminate in their L&G pull-down menu between types of salmon, after 5 mos. on this plan, I feel confident enough to base my choices on the stated nutritional requirements for the L&G. But, you could certainly use 5 oz.

But, the 1/4 cup of eggbeaters (30 calories) would be additional. I got the nutritional data on the TJ's salmon from the label. I have found in the past they are very accurate. And capers sound like a super addition!..

Jillybug, I like your idea of adding capers. I might add a little Mrs. Dash spicy to it too and skip the mayo...

I put some finely chopped green onion and red bell pepper in my patties. Yummy!..
