Hi, This board has been a great resource for me (3 weeks in, 13 pounds down!), so I thought I'd return the favor by sharing a recipe I made this week. It was delicious and so filling. Plus, it really hit the spot now that the weather has gotten colder in my neck of the woods. I made a spicy Asian Shrimp Soup...

I took a can of chicken broth and put it on the stove to heat up. Added a bit of water (1/2 cup maybe) to make more broth. Grated about a teaspoon or so of fresh ginger into the pot. Chopped up some mushrooms and a few stalks of asparagus and threw those in to simmer. While the veggies were simmering, I took some frozen, cooked and peeled shrimp, ran some water over them to thaw them, popped off the tails, and roughly chopped them into pieces and tossed them into the pot as well. Added a handful of shredded cabbage/cole slaw mix, a few chopped green onions, a dash of Newman's Own Light Sesame/ginger dressing (or could probably just add soy sauce or rice wine vinegar), a sprinkle of crushed red pepper and, at the last moment, a handful of cilantro and a squeeze of lime juice.

It made 3 or 4 bowls of soup... I could barely finish eating it. But it was so good! I wasn't super strict about measuring anything but I figure the veggies I used added up, roughly, to the 3 green servings, the shrimp was my lean, and the dressing, lime juice and cilantro were condiments. I highly recommend it, and, if you have the ingredients on hand, it took less than 10 minutes from the time I walked in the door from work till I was sitting with a steaming bowl of soup in front of me.

Wow. That sounds fabulous. I need to try this out too. I LOVE cilantro. It's my favorite herb. I use fresh cilantro and count it as part of my lettuce when I add it to salads and part of my veggies when I make homemade salsa.

To me it counts as a greens type vegetable if you are using fresh cilantro. I only count it as a condiment when it is dried..

I can't wait to make this. I think I have everything but the Cilantro (my favorite as well Shauna) including homemade chick stock. YUM!!!..

Please tell me we can have a whole can of chicken broth??? What do you count broth as??.

It totally comforted me today it was so cold out. I made egg drop soup out of ..so good..love it....

This was absolutely UNBELIEVEABLE the other day- I LOVED IT! It took me forever to finish it, but I have rarely been happier after a L&G.... I'm SUCH a soup girl, but there's something different about these kinds of soups than the Medifast one- my minestrone (sans pasta) is something I'm counting down for transition for (there's nothing in it I won't be able to have then), but this will be in my repertoire FOREVER AND EVER. Can you tell I love it?.

And Lisa- yes, 8 oz. broth is a condiment...
