I would love to have some recipes using pumpkin. I found one called pumpkin pie breakfast cake. Any more out there? I would like to use it and count the pumpkin as my veggie...

Of course I had a bunch of recipes but lost them when our subscriptions went poof.

Here are some I dug up....

Pumpkin Oatmeal.

Pumpkin Pie Breakfast Cake.

Pumpkin Souffle.

Pumpkin Donuts.

NS doesn't list it as a veggie, so I guess no. I've never had pumpkin any other way than desserts and roasted seeds. That you can have.....a few pumpkin seeds according to NS. I love pumpkin flavored desserts....particularly pumpkin cheesecake. Since pumpkin is a type of squash, you'd think you could have a little as a serving. Not for sure what's the reasoning.

People use butternut squashes to make pies...like pumpkin. I'm interested to try that one day..

Pumpkin may be used as either a fruit or a veg serving. You want to make sure you are getting the cans of pumpkin (approx 25-30 cals per 1/2 cup) and not pumpkin pie filling, assuming that you aren't buying/growing pumpkins and boiling and mashing them yourself..

Actually, pumpkin is listed as a vegetable in the extended vegetable list..

VEGETABLE SERVINGS 5g carbohydrates, 2g protein, 25 calories.

Serving Size.

Artichoke, whole 1/2 large.

Artichoke Heart 2 pieces canned (not marinated).

Artichoke (Jerusalem or Sun choke) 1/4 cup.

I usually eat all breakfast at home, hence I am out of bars before I am out of lunch or dinners. Does anyone have a good substitute according to stats as well as what tastes good. I used to eat Atkins (never really likeed the taste compared to Nutrisystem harvest nut bars)..

Where oh where can I even find canned pumpkin anymore? Libby's went out of business, and I cannot for the life of me find it here in Portland. I haven't tried Whole Foods yet, just Fred Meyer's (Kroger) and Safeway so far...

I dont' usually come to the boards but saw this on the community page and had to ask.

Libby's went out of business? When, how what all products did they have besides canned veggies.....didn't they have frozen ones as well.

Libby's is owned by Nestle. There is nothing on the Nestle site about Libby's going out of business..

If you have a Trader Joe's, they carry their own brand of canned pumpkin, too. However, you generally find that canned pumpkin is available in the fall (Halloween, Thanksgiving and Christmas seasons)..

2009 was a bad harvest year, so there were shortages reported...

I was told by a clerk at WalMart that there was some problem with contamination so all the pumpkin has been pulled off the shelves...

I also can't find pumpkin on the Western Slope of Colorado. This Fall, I will stock up on a bunch of it..

I was saddened to discover yesterday that my big freezer in the basement died on Thursday after a power outage and I lost everything in it, including all of my pumpkin puree that I made from scratch from pumpkins my Father-in-Law grew..

I hope he planted some this year if not I'll have to wait until fall to stock up on the canned stuff...

I found the canned pumpkin in the baking aisle at my Giant Supermarket.

It was on the bottom shelf - Had to do squats to get to it - great exercise..

Ah, thanks. Only 1/4 cup of carrot juice is a serving? That's not a lot.....but it's good for when I'm sick of veggies or V8. I'm starting to get bored with them,so on a day when I'm feeling like I have to force 'em down....I'll just use the carrot juice and down it like a shot. lol I saw some by Bolthouse Farms the other day. It was $5 per bottle....kinda pricey...

All the rain last Fall ruined the crop, that's why you can't find any. Stores warehouse stuff, and they have ran out. Wait until the fall, and pumpkin will be back..

Libby's has not gone out of business, they are owned by Conagra. They just don't have any pumpkin...
