I have heard so much about the recipe board but where do I find this? I would like to try the muffins and other things I have read about from other members...

Hello.

Here is teh one I use it makes 3 little muffins in a regulare cupcake tin.

In a bowl:.

1 pkg Oatmeal mix.

1/4 tea baking SODA (Box).

1/8 tea baking POWDER (Can).

Splenda to taste.

Spices to taste (Dry only).

In a 1 cup measure:.

1/3 cup water.

1 tea white vinegar.

1 tea vanilla (or to taste, or other liquid flavor).

I make 3 muffins in a cupcake tin. The oven should be preheated to 350..

You MUST have everything ready to go before you mix the wet and dry as the chemical reaction takes place quickly and we want to trap as many bubbles as possible..

Mix the dry ingredients well, and then mix the wet ones. Pour the wet into the dry and mix up to a smooth batter as quickly as possible. Pour into pan. Bake for 15-16 minutes..

Turn out of pan immediately...

I see you found the board and hope you've found some great recipes as you've looked around. Here are the muffin recipes I use the most often.

Oatmeal Muffins.

In a bowl:.

Suesully's Maple version of BT's newest Pumpkin Spice Muffins version:.

1-apple cinnamon oatmeal.

1-chai latte.

1/2 tsp baking powder.

1 TBS Brown Sugar Splenda.

1/4 tsp Pumpkin Pie spice.

1/4 tsp. cinnamon.

Mix dry ingredients..

Add the following:.

1/4 tsp vanilla extract.

1 tsp MAPLE extract.

1/4-1/2 cup water (start with 1/4 c and add a touch at a time for a not too runny consistency).

1 tbsp SF Davinci GINGERBREAD Syrup.

Mix well and pour into 6 muffin tins..

Bake at 350 for 20-25 min..

I bake for the whole 25 min as I like my outer crust a little crunchy..

Pumpkin Spice Muffins!:.

1-apple cinnamon oatmeal.

1-chai latte.

1/2 tsp baking powder.

2 packets Splenda.

1/2 tsp Pumkin Pie spice.

1/2 tsp. cinnamon.

Mix dry ingredients..

Add the following:.

1/2 tsp vanilla extract.

1/2 tsp coconut extract.

1/4-1/2 cup water (start with 1/4 c and add a touch at a time for a not too runny consistency).

1 tbsp SF Davinci Caramel Syrup.

Mix well and pour into 6 muffin tins (2 Medifast meals).

Bake at 350 for 20-25 min..

Pumpkin Spice Muffins! Yum!.

Even though I love the Chai Latte as a drink I am a Medifast muffin fan and am always looking for more muffin and cookie recipes..

Well, I'd read somewhere a suggestion to make pumpkin bars with the Chai Latte and I thought about making some Pumpkin muffins instead..

Made them and love them! In fact, they're one of my new favorites!.

Definately a recipe for this fall and winter!.

1-apple cinnamon oatmeal.

1-Chai Latte.

1/2 tsp baking powder.

2 tsp Splenda.

1/2 tsp pumpkin pie spice.

Mix the dry ingredients and then add.

1/2 tsp vanilla extract.

1/2 tsp almond extract.

1/2 cup water.

Bake at 350 for 20-25 minutes and cool..

Makes 6 muffins (3 muffins for a Medifast meal)..

Tried this one today and it was awesome! I had to adjust the recipe to allow for ingredients on hand (no splenda, almond extract or pumpkin pie spice). I dropped the Splenda completely and they're still plenty sweet for me. I doubled the vanilla extract and substituted apple pie spice for the pumpkin pie spice..

Thanks for the recipe! After trying my first oatmeal yesterday, I was too chicken to eat another one without some doctoring. And now I have muffins to carry to work for a meal when I'm crunched for time...

I'd recommend doing a search for Pumpkin Spice muffins on the board. Read the original thread and I think BT2006 went on to modify that recipe on page 3 of her thread (she dopped the almond extract and added vanilla and coconut instead) and it was MUCH better. She also added caramel SF syrup and it rocked. It's my favorite recipe...

I don't know what I did wrong but I used the muffin recipe and they looked like hocky pucks. The outside was crunchy and the inside was way to mushy. I prefer the box muffin recipe to this as they puff up a little bit and don't look like hocky pucks.

Was just trying something new. I will stick to my Chocolate grahm cracker pie recipe with the oatmeal. Hope others have better luck then me...

WHat's that?? Sounds good.... Also, for muffins, I had the same problem until I tried the Cowgirl Starter Muffins recipe, it cooks them slow and all the way through, very dense but very good!..

Hi, new to the board and just wondering what the Cowgirl Starter Muffin recipe is? I really don't like the oatmeal so I was trying to find something else I could do with it?..

I now add flaxseed meal to all my muffins and they are PERFECT!!!.

Made some Cowgirl mufins today for my trip to Los Angeles..

Go to the recipe forum and search for Cowgirl Muffins or a poster named heyloosie!.

Ya'll don't forget my Chai Cookies or Christmas Cookies either, they are pretty good, too!..
