Spinach is one of my favorites and when it became unavailable during the e coli crisis I was lost without it..
Anyway, I have spinach salad with a chopped hard boiled egg and black olives and lite ranch dressing for a lean and green meal sometimes. I also almost daily have spinach sauteed litely with chopped garlic and 1 tsp olive oil and sea salt and pepper..
I've revamped my all-time favorite spinach recipe to make it healthy and Medifast friendly. I boil the spinach with salt,pepper,onion powder to taste (about 1/2 tsp) and a dash or two of garlic powder. When it's done, drain it and add 2 TBS I Can't Believe it's Not Butter Spray and 1-2 TBS of Kraft FF Mayo. Tweak the salt/pepper to taste and enjoy Creamed Spinach!.
This same recipe is also wonderful piled on top of a piece of fish and baked in the oven...
In an omelette ... add it to the Medifast soups ... steamed with some cider vinegar on it. Yum!!!..
Maybe added to the Medifast cream of broccoli Cracker Recipe that's posted or added to the Medifast cream of chicken soup Pizza Crust recipe or as a topping to the Pizza Crust when you make it??.
Yum, now I am gonna get some and fill my body with the goodness of SpinachTONS of vits and mins in it for strong health.

I bake it with the Medifast eggs and scallions and garlic for a spinach quiche puff..
You can pound a raw chicken breast thin, wrap it around your spinach, then pour medifast friendly tomato sauce (Italian spiced) over it or use a NF dressing. Bake until the chicken is done. Yum!.
Mix a cream of chicken soup with less water and combine with your spinach. Bake until set. Kind of a creamed spinach taste..
The spinach is good added to the chicken and rice soup, too..
I have made a meat loaf of ground turkey, dry-squeezed frozen spinach, scallions, garlic and other spices. Mix well and form into a loaf and bake until done..
