I tweaked a standard recipe around and came up with a much lower fat, cholestrol free version of Zucchini Latkes. And they tasted AWESOME! Even non-mf loved them! I counted 3 of them as my L & G meal with NSA Apple spread. I used Enova Oil product to cook them (doesn't store as fat in your body) Recipe makes 2 dozen..

Zucchini Latkes.

4 med zucchini.

2 small red onions (or 1 jumbo).

1 carrot.

2-3 tbsp soy flour.

1/2 cup eggbeaters.

Salt and Pepper to taste.

Enova oil.

Wash, peel, and grate zucchini with the grater/shredder disk of a food processor. Prep and grate onions in the same manor and place zucchini and onions in a bowl. Switch to chopper blade and chop carrot to fine pieces (near pulverized). Add to bowl.Add remaining ingredients except oil. The mixture should form a ball in your hands. If too soggy, add a bit more carrot and soy flour (remembersoy flour has no gluten).

Pour 1/2 inch of Enova in frypan and heat oil Form pancakes from the batter with your hands and drop into frypan. Turn halfway through cooking until golden brown. Serve with Fat-free sour cream and no sugar added apple spread...

This is a great idea! Did you run 'em past Nutrisystem to see how the carbs count? (How much do carrots add anyway!) Can't wait to try them! I blew my diet on two regular latkes last Friday and don't want to do it again...

I didn't run these past NS, but heyif it keeps ya from eating the potato dredge in oilit is soooo worth it! And figure 1 carrot in 24 latkes? Not that much..

I've been making the zuccinni latkas for ages - but never thought about the soy flour... duh.

I never made zucchini latkes (I was thinking about cauliflower but this sounds better). What happens if you leave out the carrots?.

Only Jews (and maybe Italians) would have a holiday (well, a festival) that celebrates oil! OY!.

Carrots are not Medifast approved. Dunno about soy flour. They've looked at unblanched almond flour and said we could use it as our snack, as long as we keep it to a small portion...

I think almond flour would work great or even carbquick - don't know if it is medifast approved, but it is low carb..

I have made something similar with cauliflower and it comes out pretty good...
