PLEAAASSSEE - somebody tell me how to cook something that tastes decadent and spicy!!!!!!!!..

I marinated my chicken breast in lime juice and hot sauce, with Montreal Chicken seasonings. THe longer you marinate the deeper the taste. I used 2 breasts, 3 limes and about 1 tsp of hot sauce. To cook I put a small amount of olive oil in cast iron got it really hot, browned one side of breast about 3 min. then turned it over and fininshed it in the oven at 375 for 20 min right in the same pan. Topped with some green onion.

I bought cubano peppers (big, and medium spicy), then hollowed them out and filled them with cooked ground turkey breast spiced mexican like I like it (cumin, cilantro, roasted chipotle chili powder) mixed with salsa. I put them in a little casserole dish, and topped them with enchilada sauce (it was surprising not bad carb or cal wise, used 1/4 cup). I baked this for about 1/2 hour, then topped it with an ounce of shredded chedder and baked again until melted..

Chile rellenos a la medifast..

Sometimes a girl just *HAS* to have Mexican!..

I felt like that yesterday, so I put a pork tenderloin in a crockpot with a can of Rotel and some coriander and cumin. All those other suggestions sound great, I'll have to try them. I think I could eat Mexican food every day...

Cilantro is a good flavoring to use too. It can be bought fresh...

Maybe try this? It was my 'desperation' Mexican adaptation.....

Chicken Tortilla-less Soup..

4 TBSP. Chopped Green Chilies (Old El Paso ).

3 slices onion, chopped.

1 tsp. garlic (minced).

12 oz. cooked chicken breast (diced).

Cup zucchini.

2 cups low salt, low fat chicken broth.

1 cup canned low salt diced tomatoes (watch nutritional count and aim for no more than 8 carbs for the cup).

Tsp. cumin.

Tsp. black pepper.

Spray a pan with PAM and saut the onion, green chilies, and garlic. Add the 2 cups of chicken broth, 1 cup water, and remaining ingredients. Simmer for 45 minutes to 3 hours whatever time frame you operate in! Add water as needed.

When ready to serve, if you can afford the calories and you have limited your chicken to the appropriate serving, sprinkle 1 oz. of shredded low-fat cheddar cheese over the top. Makes 2 medifast servings..

268 calories and 11 carbs per serving without the cheese...
