Medifast Oatmeal Muffin recipe

Like everyone else, I also have a modified muffin recipe that I'd like to share. Just make sure to take the egg white out of your lean and count the condiments...but these are the moistest muffins I've yet made with MF!.

Preheat oven to 425 degrees..

1 Packet Medifast Oatmeal (I prefer the Blueberry, but have done it with all of them and none taste bad).

1/8 tsp baking powder.

1/4 tsp cinnamon.

1/2 tsp vanilla extract.

1 packet Spenda (I used Nutrasweet because it's what we have in the house, but you can taste the difference...go with Spenda).

2 tbsp egg whites or 1 large egg white (originally I did one tbsp and they were fine, but 2 makes them more cakey).

Slightly less than 1/3 c. water (but more than 1/4 c.).

I mix all the dry ingredients first, then add the wet ingredients and fold them together with a spatula until there's a nice batter a bit thicker than cake mix. Then I let it sit for about 5 minutes to soak in. If it looks like it's getting too much like oatmeal, I add a tsp of water at a time until it returns to a semi-thick batter consistency.

I spray my muffin tins with PAM right before I put the batter in. One packet yields two medium muffins (I find it's too much batter for one muffin cup). I normally fill the muffin cups 1/2 to 2/3 full.

Cook at 425 for 13-17 minutes, checking every two minutes after 12 minutes. The top will be a deep golden brown when they're all done.

I let my muffins cool and then wrap them in a paper towel and put them in a plastic baggie. I normally make 3 sets of muffins at a time (since there are 6 muffin cups on my baking tray), and I find that wrapping them in the paper towel before putting them in the plastic bags helps them retain moisture better...

Thanks so much for the recipe. I am anxiously awaiting my first batch as I type. Funny thing is I have chickens so eggs are always in abundance, except today. My DH hard boiled a gazillion the other night and my sis took my last dozen, cuz they always make more! So this morning I am all ramped up to make the muffins, get all ingredients together except I can't find one egg in the place! Not even my egg beaters!.

It is down-pouring in N. Cal. today and my coop is not close to the house, oh and did I mention I am 5 weeks out from a broken ankle surgery? I am bound and determined to get eggs and make these muffins!.

I really wanted muffins this morning.

Boy, I hope I didn't screw them up somehow!! Ha!.

I am making these right now, to eat tomorrow morning. I was going to make just 1 batch (just in case I didn't like them), but I realized I had too much water so decided to add another packet of oatmeal, etc. to make 2 batches. They are still in the oven, but they look and smell SO good right now! I am super anxious to try them and will report back tomorrow morning on how they turned out.

I tried making some "brownies" a few weeks ago and they came out TERRIBLY!!! So I was a little hesitant to try baking something again, but felt like it was time to try again..

I will have to try these! I like the oatmeal, but it gets old fast..

I'm going to try it with Truvia, I have read some negative stuff about Splenda/.

Is Splenda aspartame?..

Oops, no, I found it, it contains chlorine..

Truvia (and other Stevia products) are made from a plant, the Stevia plant and are natural, although Splenda is not..

Sorry, I'll get off my soapbox. I still use the "pink" sweetner from time to time, but am trying to be more careful...

I tried them this morning and they were DELICIOUS!!! I used those paper muffin cups so didn't think I needed to spray the tin with Pam...oops!!! Had a little extra fiber with my breakfast this morning..

Please, anyone, help me find the muffin recipe that calls for 2 Medifast scrambled eggs, 2 Medifast hot cocoa and 2 Medifast oatmeal. [makes 6 Medifast meals] I made them last week and they were excellent! ...But somehow I've misplaced the recipe. If anyone knows the link, please message it to me. I'd be so grateful if I could make them today. I wrap each one and freeze then take one to work for my mid-morning coffee break.

Never-mind: Found it!!.

Simple and Delish!.

2 pkg oatmeal,.

2 pkg vanilla shake or pudding,.

2 pkg egg,.

2 tsp baking powder,.

2 tsp cinnamon,.

1 cup water.

Divide batter between 6 muffin tins.

Bake at 350 for 20 minutes. Each muffin in one Medifast meal...

I make this muffin every Sat Morning as a treat in a mini loaf pan. I ordered some different oatmeal flavors for variety....These are YUMMY!..

Wow - I have struggled to stay on track and these were JUST YUMMY - I'm a 'chewer' so all the shakes and soups were just not cutting it for me - this was heaven!! Thank you!!! I have made some of the muffins or cookies in the past only to have them taste like cardboard - this was great!!..

I just made these, but since I only had one packet of vanilla shakes left, I used one banana shake packet, too. Can I just say: YUM!.

They are delicious! They taste like banana nut muffins! How handy to bring on trips, or bring with you when you don't want to announce you are dieting?! I'm hyped!..

Chris, it depends on which recipe you are referring to. The first recipe in the thread was for 1MF meal and some lean to be deducted. The second recipe uses 6 meals so divide the number of muffins it makes by 6. For instance if it makes 12 muffins, then 2 muffins would be a meal...

Thanks for the recipe. I was getting really tired of the Oatmeal. I have ordered Medifast eggs but they have not come yet. I tried these Sunday for breakfast and had them every morning since. Maybe I should have ordered more OM?..

O.O these sound a lot better than what I do-.

I just add a little water make it into a paste flatten it out and fry it with evoo like a pancake D:.

I sprinkle some truvia on top of it just for an extra kick but... o.o muffins.... sounds good!..

Thanks for posting this recipe, PGAIda!!!! I made these over the weekend and they were indeed delish! I used the puddings instead of shakes and added a little Splenda to sweeten. They save you so much time!!! i'm going to make another batch this weekend as I enjoy them for breakfast with my coffee. One afternoon I put some PB2 on top (2 TBSP counts as a daily snack) and it was awesome! I had been longing for something with a bread/muffin/cupcake consistency and this did the trick!.

I just made these with apple cinn oatmeal and egg beaters (since that is what I had on hand). Also I didn't have cinnamon so I used a sprinkle of pumpkin pie spice.

YUM!!! I ate mine with a little PB2...

I know I should know this, but...

If you make a bunch of the muffins, wrap them in a paper towel and put them in a baggie, do they need to be refrigerated? And how long can you keep them?.

Ok I'm new so not sure what to delete if I put egg beaters in the muffin recipe?.

I know it comes out of my lean and green protein, but how MUCH comes out?..

If it makes 2 does it count as 2 meals? I know it's a stupid question but I have only been doing this for 3 days and so far the oatmeal and the chicken noodle soup are the worst...
