Made the recipe that was posted by suesully on 12-14-06. The day I printed the recipe my 8 year old grandson Chevy was sitting beside be and he said, boy that really looks good. When I made it today I took him a serving and he really liked it. I had been home for a few minutes when his 15 year old brother Josh called and wanted to know if I had any more. I told him to come get the two servings I had left that I had enough chicken to make some more. To sum it all up they loved it as much as I did..

Well I guess I will have to make it again in a few days. Thought I would share this with the group..

Mexican Chicken.

1 pound boneless chicken breasts.

1 teaspoon Taco seasoning.

Salt to taste.

1/2 cup enchilada sauce.

4 ounces shredded cheddar cheese.

3 green onions, chopped.

Sprinkle the chicken on both sides with taco seasoning; grill or saute. Cut chicken into cubes and place in a Pam sprayed 8x8" baking dish and salt to taste. Add the enchilada sauce and toss to coat chicken. Sprinkle cheese over chicken and bake at 350 for 10-20 minutes, until hot and bubbly. Scatter green onions over the top..

Makes 4 servings..

I used chicken tenders and cut them into cubes before I sauteed them in the frying pan..

Also substituted FF and 2% cheese to cut down on the fat content and added the onion before I baked as I can't eat raw onions. This was very delicious...

Glad you liked it. The post was from Hispanic Medifast Friendly Recipes for Christmas thread and here are the pictures of it and the Mexican "rice":.

Per Serving: 266 Calories; 12g Fat; 33g Protein; 4g Carbohydrate; 1g Fiber.

MEXICAN "RICE".

10 ounces fresh cauliflower, grated, 1/2 medium.

1 small onion, slivered, 2 1/2 ounces.

2-3 tablespoons Smart Balance spread or oil or a combination.

1/2 cup salsa.

1/8 teaspoon garlic powder.

3/4 teaspoon salt, or to taste.

1/4 teaspoon pepper.

1/8 teaspoon granular Splenda.

In a very large skillet, with a lid, saut the onion in spread and/or oil until tender. Stir in grated cauliflower, then remaining ingredients. Mix well. Cover and simmer 10-12 minutes until the cauliflower is tender, but not mushy, stirring occasionally.

Makes 6 servings.

Per Serving: 56 Calories; 4g Fat; 1g Protein; 5g Carbohydrate; 2g Fiber..

I totally love this idea, especially the mexican "rice"... I may try this over the weekend. Is the Pace enchilada sauce Medifast okay?..

After comparing all the different brands in the store, it was by far the lowest in carbs (no starch added) and lower in calories and sugar. At ~1.25 carbs/6 calories per TBS it is within Medifast guidelines for condiments. Per serving for the recipe is 2 TBS or ~2.5 carbs/12 calories.

I live on the opposite coast from you and if you check there may be equal or lower ones in your area.

P.s. As posted in the original thread, these recipes were based on Linda's Low Carb recipes...

Hey....isn't there only 3 servings here because the cooked weight will probably be about 5 oz ( x3) and 1 oz or so of the cheese per serving?.

We just made this and, if you haven't tried it yet, my question is WHY NOT??? I'll admit I was skeptical of the 'rice' when I first read the recipe and my first thought was 'how do you grate cauliflower?', but once I got past that initial reaction, this was the BEST! My husband was oohing and ahhing over it and wants to know if we can save the recipe and have it again. Of course we will!.

To the person who first thought this one up my hat is off to you! Thank you from the bottom of my mexican food-loving heart!..

I just fixed this for our family "superbowl" dinner and it was a hit! It is hard to believe the rice is actually made from cauliflower. Thanks for the great recipes!!!!..

I like the chicken but I LOVE the "rice"!! I'm now buying cauliflower every week, making it & having it as my vegetable 2 or 3 times a week. Amazing how good it is!! Thanks again to the wonderful recipe magicians that came up with this!..

I was just sitting here wondering what to have for dinner....today is the first day that I have been ABSOLUTELY HONEST with my Medifast dieting. I opend up the "community" and saw this post...hmmm....looks interesting.....started reading.....looks more interesting...saw the pictures....LOOKS AWESOME...read some more and will now try this for dinner tonight! By the time hubby and I get home it's almost 6:00pm and I have to throw something together that's quick, yet healthy. Girls' have dance class at 7:30, and while there I'll either walk or do homework....probably homework. My kids are REALLY picky eaters, so I'll post tomorrow on the results. I'm thinking it's gonna be good....!..
