One head of Cauliflower.

2 Tbsp Chick Broth.

2 tbsp Lite Cream Cheese.

A little salt pepper and garlic.

I steamed my Cauliflower for about 20 min until fork tender. Mash all ingredients together and you have 2 cups...

Try using 2 tsp of feta cheese instead of the cream cheese.

Makes the texture soooo much better..

I can atest to how great these are, as I followed kjduffy's recipe almost exactly. The only thing I did differently was I used 2 wedges of LC light cheese. I'm not sure how it effected the texture, as I have not yet tried it with the cream cheese. But the LC cheese is definitely a GREAT alternative!!!.

Had 'em tonight. I steamed the cauliflower...measured out my portion...added 1 laughing cow...and whipped them up in the MB. Yum!..

I will have to get some LC light cheese this week. I just made them tonight again. Yummy.

I too make them with LC lite, garlic and herb and a little lo fat feta. I read somewhere about after mashing to bake them. tonight I'm going to use less cauliflower and add some cooked mushrooms and spinach, put them in a casserole and try baking. In the "old days" I loved having twice baked potatoes with chopped up, cooked veggies for the "Ultimate" baked potato...

I count one head as 6 servings. (6) 1/2 cups each. So if I have one half of the Mashed Cauliflower than that is my Green for the day. Hope that helps! I also use 2 laughing cow cheese lite garlic with it and don't use the chicken broth. Whip it up with a hand blender and it tastes just like Mashed Potatoes..

Hi! I'm new too, and this sounds very interesting! I'm definitely going to try it!.

So, 1 cup of the final mashed cauliflower is equal to your daily Green?.

How do we count the cheese and broth that goes into this? Fat serving?.

2 LC lite Cheese in One HF.

1 1/2 Mashed Cauliflower is your green for the day..

Now I don't use the broth. There is enough liquid in it. So I make one head and I have 2 full servings of LG. Leftovers for the next day.

And I use a hand blender that helps make it extra smooth. You could use a blender too. But a masher doesn't get them that smooth...

I made 10 oz frozen califlower and added 2 wedge LC Garlic& Herb. It roughly equals 1 1/4 cups and I am so full I can not eat another bite. I did not add the broth. This tasted amazing with my grilled chicken. Thank you!!!!..
