Baby, it's cold outside! 7 degrees...brrr!!!.

Today's L&G is homemade MF-friendly (no cannelini beans or pasta dots) escarole soup w/freshly shredded Parmesan cheese and a small tomato salad appetizer. Made the soup yesterday so it had a chance to "age.".

I divided the soup and did put the cannelini (white kidney beans) and pasta dots in my hubby's portion.

Making spaghetti and garlic bread for the family so Im taking some of the ground beef and adding taco seasoning and making it into a nice taco salad kind of thing wit h my green and some of my home made salsa for dressing..

I am having grilled chicken over a bed of salad greens with Galeos salad dressing. I just got these dressing yesterday and they are FANTASTIC!..

Grilled sole with a great lemon-parmesan recipe I got from another Medifaster on the boards here... so good! And a green salad with ripe green olives, fat-free feta and sliced tomatoes sounds good...

LOL Do you mean stuff like "Hubby-bites" or the L&Gs in general? I love to cook but I guess I think up menus and recipes and cook them 'cause if I didn't there would be NO acceptable meal. Hubby's idea of dinner if I don't cook or I'm away is a bag of nuke popcorn or a can of Pringles. ::sigh:: My Mom's idea of dinner at home now is a large slice of cheesecake (she is a size 0). ::bigger sigh:: So, my cooking feeds everybody healthy stuff and keeps the temptation-stuff away from me. I just add the healthy-ish non-MF items (like starches) to their meals..

I had a homemade grilled chicken caesar salad sans parmesan and croutons, with Galeo's dressing. That's what I'm having tomorrow too!..

This is probably not perfectly on the plan but I was having a major hankering for Italian Food- This was excellent and totally satisfied my pasta tooth!.

Sun-Dried Tomato and Artichoke Chicken.

INGREDIENTS.

4 skinless, boneless chicken breast halves.

Salt and pepper to taste.

2 teaspoons olive oil.

1 (14.5 ounce) can diced tomatoes with green peppers and onions.

1/4 cup sun-dried tomato pesto.

1 (14 ounce) can artichoke hearts in water, drained and quartered.

DIRECTIONS.

Season both sides of chicken breasts with salt and pepper. Heat oil in a large skillet over medium-high heat. Place chicken in skillet; cook, turning once to brown each side. Remove chicken from pan, and set aside.

Pour tomatoes into pan; cook for 1 minute, stirring constantly, and incorporating any brown bits from bottom of pan. Stir in pesto and artichokes, and return chicken to pan. Cover, and reduce heat to medium. Simmer for 5 to 10 minutes, or until chicken is cooked through..

Servings Per Recipe: 4.

Amount Per Serving.

Calories: 249.

Total Fat: 6.5g.

Cholesterol: 68mg.

Sodium: 1193mg.

Total Carbs: 15.4g.

Dietary Fiber: 4.8g.

Protein: 31.8g.

We had Homemade Chicken Szechuwan Stir-Fry - completely medifast legal and very filling! Since DH is on maintenance, I added carrots to his portion and increased his broccoli. Mine was made with zucchini, summer squash, a slice of onion, bean sprouts, and chicken strips (from a Tyson pouch). Spices, and one tablespoon of sauce (sauce was less than 4 carbs)... I will say that even after 5 months on Medifast, I tend to lick the plate afterwards and fight the cats if a morsel drops on the floor........
