Yum! I just had one of those moments that had to be shared.....

I was craving the flavor of fajitas but didn't want to go out (had something to do with being in my jammies by 6pm tonight....).

Anyway - I just made up a stir-fry conglomeration where I sauted summer squash, onion (Okay, I'm a rebel...) and green peppers with 6 ounces of John Soulles Grilled Fajita Chicken Breasts strips. Tossed in some garlic powder, Mrs. Dash Spicy, etc. When everything was looking good, I added 1 tablespoon of Lawry's marinade called Baja Chipolte, stirred it all around, topped it with some chopped tomatoes and an ounce of lowfat colby cheese..

To quote my southern Mother - it was 'Larripin Good'.... to quote a friend of mine who isn't quite as genteel - it was so good it made you want to slap yer mama!..

This sounds really good, One question I have seen many times, Onions are on the vegetable list, but some say they are not to be used I dont get it. Can someone tell me?Thank you for the yummy recipe!!!!..

Hookay here's what I THINK the Oniongate is.....

When I started Medifast back in August of 06, onions were on the legal list. If you logged all your food you realized that they were one of the higher veggies as far as carbs were concerned, but they were still on the 'nice' list..

Nutrition Support has been revamping the plan to make it more efficient and clearer - user friendly if you will..

During their revamp, onions went on the 'naughty' list because if a person ate their entire 1.5 cups of veggies with the onion as their choice, it would be very high in carbs. And probably not to pleasing to the rest of the world, either. So - officially - onions are not on the list except as a condiment of 1TB. chopped per day..

But I'm old, and cranky, and obsessive about logging all my food. So I decided to 'dance with what brung me' because I onion'd the first 5 months of my program and lost 50 pounds. But - I'm very cautious when I use them. I measure and I log and I'm careful to balance out my onions with extremely low carb veggies when I indulge. If I were starting out today I would follow the program exactly as it is currently written because you don't know how your body is going to handle the carbs, etc. I was on it before, so I harken back to the 'good ol' days!'.

I'm thinking you could use your TB. of onions in this recipe and some scallions - which are on the list. You'd still get the flavor of the fajita..

Thank you so much, I guess they sent me the old Vegetable List cause it's still on there.. And I just got it this Feburary. I have made the error, then and put onions on my lettuce burgers, and onions in stir frys. But thank you now I will watch them for sure!!!!..

Mamameow...you are cracking me up. Go onions. I lost 40 pounds eating the little *astards and I'm not giving them up! I don't eat like a cup and a half of them but they are on every salad I make. Just can't help myself...

Boy there are day when I have my jammies on by six too! Glad I'm not the only one!.

I find my packages of John Soulles Fajita strips and grilled chicken strips (eight ounce packages) in my SuperWalMart over in the section of "home cooked but not really" refrigerated stuff.... The end of the meat counter, where the pre-cooked packs of roasts and chicken and BBQ tubs, etc. Not freezer, but refrigerator case. There are also packs of "Carving Board" and "Pilgrims Pride" Chicken Breast Strips there as well...
