Hello Medi-chefs;.

I am a little tired of chicken and would like to have a little beef tonight (some eye of round or something else lean) but need some legal suggestions on how to prepare it. I know it won't be super tender but if it tastes good, I could over look that.

Is it too late to use a crockpot? Or do you have a pressure cooker?.

Those are the two ways that I roast beef for tenderness.

I know that some of our other Medifasters have a great recipe out there - I'd love to have it as well!..

Thanks for the reminder about the pressure - always a sure way to make lean beef tender - now if I could just find the little doo-loolly that goes on top of mine....hmmm.

I found a marinade with <1 carb and 0 fat (5 cal per T) per serving so I am going to try that and broil it - hopefully it will be tastier than shoe leather! Will let you know if it is any good (crossing my fingers).

I usually throw a roast (pork or beef) in the crock pot with a can of spicy rotell tomatoes, a can of green chilies, and some low sodium beef broth. Cook it on low 8-10 hours until it's shreddable. Its pretty spicy, but us good plain, in a salad, or in an omelet..

You can also do it in a roasting pan, it cooks faster and is pretty good but not quite as tender..

Have you tried crock pot turkey breast yet? All you do is rub a turkey breast with a tablespoon of oil or butter, salt and pepper it, then toss it in the crockpot with a couple of cloves of garlic, a little onion, a sliced up carrot and stalk of celery and cook on low for about 7-8 hours. NO LIQUID When you take it out of the crock pot let it sit for a few before slicing it and just throw away the veggies that cooked with it. I saw the recipe in an old church cookbook of my mom's and have been very surprise at how moist the turkey is and what a good flavor you end up with...

Eye of round is fine roasted, I do it all the time. Slice it thin and it won't be tough at all...

I had a made a flank steak tonight.. marinaded it all day with garlic, lime juice and zesty and some oil and then made it on a grill pan on the stove.. then sliced it on the bias and served it on a salad.. It was tasty and very tender..mmmmmmmmmmm good..

Wow, this all sounds so good. I was getting tired of chicken as we eat it ALL THE TIME - even before Medifast and I really needed a change of pace. I feel really good when I eat beef and now I have some really great ideas for making it more interesting! Thank you sooooo much. Anyone else with other ideas? Keep sharing, the more the merrier!.

I do the roast in the crock pot too. Usually set it up in the morning and leave it on low all day. As long as you have at least 2 cups of water in with it will litteraly fall apart..

Usually I add sliced mushrooms, baby carots and potatoes; but since the carrot and potatoes are on the no-no's I will have to try mixing it up alittle bit.

A lite sprinkling of a low sodium steak seasoning and garlic powder and the meat does the rest...

I am new to MF, but I did a very low carb with protein Dr. supervised diet some of the things I did with flank steak or eye of round are-using the crockpot, use a large jar of pepperocini peppers with the juice,(not sure how many you can eat on MF) Italian seasoning, couple of T, and then add water to cover, cook on low all day, the meat shreds because of the vinegar and my family enjoys it on hard rolls as Italian Beef, I also sometimes add sliced onions and green peppers, not on a diet I also add a packet of au jus. I also make the meat with the crockpot, using diced tomatoes, chopped garlic, oregano, canned green chilies, 1 T of chopped jalapenoes with water to cover, you can add onion for your family, shreds nicely with flank steak for a nice mexican shredded beef...
