How would you count corn on the cob? I hate to pass it up seeing as it is in season.

In the e-class today, the Dietitian said that one could occasionally use a small corn on the cob to replace 2 vegetable servings..

1/2 cup kernals = 1 carb or 2 (occasional) veggie servings..

I just had an ear tonight....fresh from farmer's market and it was heaven! I have over 100 lbs to lose so counted as a carb. I also used some ICBINB. I wrapped the ear (after removing leaves) in wet paper towel and microwaved for 4 minutes. Yummy!..

Pam, what is an e-class? As a newbie, I haven't heard about these but am interested...

The e-classes are held in the Chat Room (the middle one from the Chat Room list) every Monday at noon Pacific time/3PM Eastern time. They are 1/2 hour question/answer sessions with the Dietitian. (There won't be a class next Monday due to the 4th of July holiday.).

You can view transcripts of the e-classes under the Dietitian's Corner here on the Discussion Board. When I first started the program in 2006, I read over 2 years' worth of past e-classes. This really helped me get started right..

You can go to SEARCH and type in e-class, filter under the Dietitian's Corner and you will get the transcripts...

I've been microwaving two ears of corn with shucks on for five minutes. I wait a couple of minutes before shucking the ears since there is a lot of steam. I use a towel to prevent burning myself- the silks just fall off and it is delicious!..
