I am so excited, best recipe I tried so far was the mac & cheese. Sorry I can't credit the original poster, not sure where I got it from. I was in a huge rush to get my mac cooking and didn't want make a mess in the kitchen. So this is my new favorite version:.

One large head cauliflower, broken down to small floret chunks. Like pinky tip size and smaller. Mine by weight came out to 9 servings of green. This made the lean part so easy, I used one lean serving of eggbeaters, 2 cups. 6oz of Cabots 75% Reduced Fat Sharp Cheddar, shredded and 4 oz Sargento Reduced Fat Mexican Cheese, shredded. Stirred it all up and baked in a deep casserole dish (sprayed 1st with Pam) I pressed it down to make sure the cauliflower was all down in the eggy cheese soup so it would soften as it cooked.

The egg beaters are pasturized so I declared it done even with the center a little gooey. I got three servings of yummy! The raw cauliflower cooked just like I hoped and had just a bit of bite and no mushy.

Why didn't I ever cook with cauliflower before? I had a generous dinner, really a ton of volume and I am not in mac & cheese coma like I would have been with the nasty kind!..

Sounds delish and is it totally OP? It sounds like it could be dangerous with all of that cheese. Are we allowed 2 cups of cheese?..

I didn't write it out well, the 2 cups is the egg beaters. The total cheese is 6oz Cabots and 4oz of the Sargento, of course that is for full three servings...

I still don't see how it adds up. 2 cups of Egg beaters is a Lean. The Leanest one.

Are you making this 3 Lean Meals? Because that is what is calculated 3 Lean meals...

I am making 3 L&G meals. Am I figuring the lean wrong? It seemed so simple because I just used one full lean for each (one full egg beaters, one full low fat cheese and one full reduced fat cheese) and then I used cauliflower for all of my green servings. In the end I ate one third of the recipe and split the rest into two servings and put them in the freezer...

HAVE YOU FROZEN THIS for re-heating later?? Does that work?.

My 'too exhausted' L&G was Cauliflower topped with the 6oz of lite Swiss in a micro... now I think I'd rather pull your "Mac" & Cheese outta the microwave, if it holds up.....

Eating the second serving tonight, the freezing and then defrosting has not changed it much at all. Yummy again although the cheese is a little firmer today. So good my skinny hubs stole my third serving. Oh well it was easy to make...

This sounds great! I'm still trying to figure out the portions split this recipe into 3 L & G's, so each 1/3 is a full L & G? Sorry, I'm new to this and still trying to figure things out a bit!..

Yes f8th514 - for the Lean - 2 cups of Egg Beaters is one portion, 4 oz of 2% cheese is one portion and the 6 oz of 75% ff cheese is one portion. I couldn't find the 75% so I used 4 oz of 2% cheddar. Still very cheesy. For the Green - it should be 3 1/2 cup servings per day. I don't know if my cauliflower head was that large so you may need to add a bit of green depending on yours. It is delish!..

Thanks for sharing. FWIW - my (1 serving) variation is:.

1 1/2 cups cauliflower or broccoli.

1/4 cup egg beaters.

1/2 cup 1% cottage cheese.

3/4 cup low fat shredded cheese.

Bake at 350-400 for 25-30 minutes.

I love any meal that I can get a whole L&G from...

This sounds flat-out delicious..

I had my doubts about the cauliflower pizza, but was shocked at how good of a dough replacer the cauli was! Trying it as "macaroni" should be amazing and I'm stoked to try it too bad I JUST did all my grocery shopping for the week.....

YUM! I used frozen cauliflower and cut them small once cooked and the cheese I had on hand (LC swiss, FF cream cheese & parmesan). This came out excellent! And my husband and 17mo old were big fans too. Thanks!..

Thanks to skinny mo for the one portion recipe, now that the weather has turned chilly I am using frozen cauliflower. Much easier and bakes much more quickly with just one serving! I still love the fresh version but there is something wonderful about the baking and eating fresh from the oven that makes it better the first time..

I agree it is a huge amount of food to eat in one sitting, lots of MF'ers split the lean and green. I guess you could use 1/2 the recipe with 1/2 any other lean and other veggies to equal 1.5 of another green...
