The "apple" crisp. It is awesome.
You can also do cottage cheese "cheesecake" filing which would be your lean..
Medifast Mock Apple Crisp.
2 cups raw zucchini slices.
3 T lemon juice.
1/4 cup Splenda.
1/4 tsp cinnamon.
1/8 tsp nutmeg.
1 Medifast BS&M or AC Oatmeal.
Preheat oven to 350 degrees. Peel zucchini & slice lengthwise. Core/seed the halves then then cut into 1/4 inch slices (or however thick you like in order to look like apple slices.) Put slices in sauce pan with 3 T lemon juice. Bring to boil & cover & cook for 5-6 minutes, until tender. Drain throughly. Place the slices back into the pan & add the Splenda, cinnamon, nutmeg & 1 tsp of the Oatmeal powder.
Pour into small oven safe bowl.
Melt 1 T trans fat free margarine & pour over remaining oatmeal. Mix. Sprinkle over the 'apples' & bake in the oven for about 30 minutes or until 'apples' are bubbling & topping is browned..
3 green servings of cooked zucchini (approx 1.5 cups cooked).
1-2 condiments (juice is drained so don't know how much is retained).
1 medifast meal__________________.
Blend cottage cheese in magic bullet with splenda and vanilla. I mix a little SFFF jello powder in it. Lemon, Strawberry or whatever your favorite flavor is. Chill..
I am going to start brainstorming on this one and I will post on my blog and this forum when I make something. This is a great idea!..
I like the idea of the fake apple crisp.... is it really tastey? Or funky?..
Just my opinion, but anything made with the oatmeal ends up tasting a little funky. The apple part is very realistic, a bit tangy because of the lemon. Another recipe that I would make without the oatmeal crust...
Do not try this at home! I just made zuchinni baked with egg beaters, silken tofu, cream cheese for healthy fat and some Torani sugar free syrup for sweetner. Basically sweet baked eggs instead of savory. The taste, wonderful, the texture, yuck. I shredded the zuchinni and mixed it all up and baked it. We ate it for dinner but it made four servings, dumping the two extra out. I tasted the batter, wished I had eaten it uncooked. Next time I will try a no bake version...
