Medifast recipe for Chocolate Muffins?

Bake yourself some Chocolate Muffins! (I think they are fabulous). This is springboarded off of OrangeBloods's banana muffins: (Thank you, OB!).

This makes 2 meals..

Preheat oven to 350 degrees F. Spray 4 sections of a muffin pan (I use a silicone one) with pam or other similar spray..

1 package Medifast scrambled eggs.

1 package Medifast chocolate pudding.

1 tsp. baking powder..

Mix dry ingredients in a bowl with a whisk..


1/4 cup sugar free chocolate syrup (I have also used caramel or whatever I had on hand. Raspberry was yummy, too!).

1/2 tsp. chocolate extract (or whatever you have that goes with the sugar free syrup flavor you used..

Combine the wet ingredients and mix with the dry ingredients until mixed. This is a thick batter. Spoon into the 4 prepared muffin sections. Wet your fingers and pat the tops of the muffins down. Bake for about 15 minutes (until lightly browned and puffy and a toothpick inserted comes out clean). I turn my oven off and let them sit in there for about 5 minutes more or so.

Eat 2 muffins for a meal.

Counts as 1/2 a pack of eggs, 1/2 a pack of pudding, and 2T of sugar free syrup per meal..

Tastes like devils food cupcakes to me!.

An observation...I stirred up my first batch just until the wet and dry ingredients were mixed. After patting them in the pan, I thought the egg particles were still very obvious. So I made a second batch and stirred them quite a bit longer. I baked them at the same time. The over-stirred ones rose up magnificantly, but when they cooled, they collapsed. They had major holes in them. The batch with egg granules showing did not rise as much, but held a better shape and texture...

I know judy your my hero too, hey do you guys know if you dont have medifast eggs, can you sub egg beaters?..

Did you use regular size muffin pans or the mini-muffins?..

I used the regular size muffin pan and I have also used the muffin pan that looks like little bundt cakes..

If they fell, it is probably because they were not entirely done inside (the collapsing souffle effect)..

I have never made them with egg beaters, because I am too "Medifast Cheap" to use my Lean & Green components in muffins! Let me know if it does!..

OOOOOHHHH these sound yummy, I can't wait to get more eggs! And I was thinking, now if you really wanted to get crazy (my middle name) just for special occassions you could fill them with Medifast pudding. Say make a batch of Medifast vanilla pudding, a bit shy on water so it isn't runny. Put 1/2 in a pastry cone (or use a baggie with a corner snipped off just a bit), cut a small pocket into the top of the muffin so you can squirt the pudding inside, and then take the rest and "ice" the tops. Now you have three meals, so just eat 1 and a 1/3. Sounds a little silly but I think it would be fun for a special treat...

Yep, yep JudyO.... I've been making chocolate muffins for quite awhile. They are my favorite (recipe and photo in my public blog) muffins of all time, although I will give yours a try too. Mine do not contain any Medifast eggs though. I've not tried any recipes with the eggs yet but plan to soon...
