So you guys have probably already done this, but I haven't read anything about it, so I thought I'd share. I used a Dutch Chocolate Shake and mixed it with a little baking powder. For the liquid ingredients, I used 2 T. of eggbeaters and about 3 or so T. of water, along with just a smidge of vanilla. It's a thinner batter than the cookies or cakes.

Then, I cooked it in a Pam-sprayed non-stick pan. Spread it quite thinly. After a few minutes, I flipped it on the other side. For the filling, I used about 1.5 tablespoons whipped cottage cheese (just whir it in a food processor) that was sweetened with 1 splenda. I folded the crepe in thirds over the filling and topped the whole thing with a mixture of Walden Farms Pancake syrup and chocolate syrup.

It was worth it! Remember to deduct the egg beaters and cottage cheese from your lean!..

Thanks for the idea. I've done scrambled eggs with sugar free vanilla syrup and cinnamon with a bit (1 oz) of LF or FF cream cheese inside. Yum!..

I have 1/4 to 1/2 cup of egg beaters every morning cook like a pancake/or omlete style. I make mine pretty well done. I soften 1 light laughing cow cheese wedge in micro, just long enough to warm or soften it. then I spread it on the egg and roll it up. Tasty!..

Warning... DO NOT try this with pudding!!! Made a big mess..But I scrapped it all out of the pan in globs and have it cooling in the fridge! Can't waste a meal....

I used a pan that was too small so it came out kinda like alil pancake lol but I still managed to fold it right - only had low fat ricotta cheese so blended that up - it's yummy!..
