If you look in the advance search option, I know there is a recipe called "mac and cheese" it uses cauliflower & cottage cheese...
1 1/2 cups grated cauliflower.
1/4 cup egg beaters.
1/2 cup 1% cottage cheese.
3/4 cup of 75% reduced fat cheddar cheese(1% milkfat and 2.5 grams of fat per serving).
Mix all together and poor in a sprayed casserole dish. Bake at 350 for 35 minutes or until golden and set. I did sprinkle with 1 tblsp of parm..
If I figured this right: 3 green, 1 lean, condiment.
Since the mac and cheese was so amazingly good, this weekend I am making buffalo chicken mac and cheese. I will get two servings from my recipe and will have with a cup of lettuce..

6 ounces of boneless chicken breast cubed and marinated in yogurt based reduced fat blue cheese and hot sauce..

For the family I will do crumbled blue cheese in their cheese mixture. I used regular cheddar for them..

I've made the mac n cheese listed above but, I really think it needs some seasoning. Last time I added buffalo wing sauce and it was really good...
I haven't tried it yet and want to and I will for sure add buffalo wing sauce! That stuff is good on anything!..
I used cottage cheese in a couple recipes I posted. The longer I'm on MF, the less I can eat it plain (more sour, somehow), but I love using it in recipes. The first was stuffed bell peppers (kind of like stuffed shells without pasta) and the second was green pie (like spinach quiche). Links are below..

This week I'm trying it as the base for alfredo sauce. I had a 3 cup container due to expire, so I needed something to do with it, plus I love alfredo. I blended the cheese with garlic, italian seasoning, and a little mustard powder until smooth. I also added about 1 tbsp parmesan to the whole batch. I will sprinkle a little more on top when I make the actual meal. I'm going to serve it over either zucchini tagliatelle (thin long zucchini strips) or roasted asparagus.
I'm planning on adding a chik'n griller or some veggie crumbles for a little extra protein. I'll post next Saturday and let everyone know the exact recipe and how it went (reheating, etc)..
One of my favorite snack meals before the Medifast plan was blue cheese and grape tomatoes, and this is just as good, maybe better and on plan!.
If I am really hungry and want something quick but really good I do LF cottage cheese with a little low fat blue cheese dressing and some crumbled lower fat blue cheese mixed in-Treasure Cove now makes it- with a bunch of grape tomatoes and celery sticks on the side. One of my favorite meals actually...
On days when I feel full but still have 1/2 my lean or more to eat I will mix a ranch dip dry mix with the Cottage cheese in the Magic bullett and use it as a dip for celery or Medifast eligible veggies. No worries on having to skimp on dipping that way. The taste is identicle to ranch dip and more protein......
I am confused...Nowhere on the allowable foods lists do I see cottage cheese or any other cheese listed...Yet there are many recipes that include them. Help me understand, please...
